Ingredients:
- 1 medium onion (chopped)
- 1 tbsp. olive oil
- 2 cups cauliflower rice
- 2 eggs, beaten
- 1 cup shredded cabbage
- 2 medium carrots (diced)
- 2 garlic cloves (minced)
- 1 tbsp. fresh ginger, grated
- 1 tbsp. brown sugar
- 1 tbsp. rice vinegar
- 1 tbsp. low sodium soy sauce or coconut aminos
- 1/4 teaspoon pepper
Preparations:
- Heat a large pan over medium heat and add oil.
- Add garlic, onion, peas, carrots, cabbage and saute until tender. Move to plate.
- Meanwhile, in a small bowl mix together soy sauce, rice vinegar, brown sugar, ginger, black pepper.
- Using same pan as you used for the veggies, cook the beaten eggs, scrambling.
- Stir in cauliflower rice and soy sauce mixture, mixing well.
